training for.... a half marathon

I have never had aspirations to run a half marathon. Running is not my favorite. 

For so many years playing soccer, it was all about training for the next step. Training to try out for a the high school team, training so I wasn't left in the dust my first college season, training for ODACs, training for NCAA, training towards a national championship. There always something I was training towards, which ended up feeling like I would never obtain the highest goal or ever be able to train hard enough. 

For soccer, if your training but not including a lot running, you wouldn't be ready for anything. Therefore, I always needed to be running on my own. Again, not my favorite thing. 

After all the years of training for soccer, I have started enjoying working out in different ways, which didn't always include running. I ride mountain bikes, swim, spinning, lifting, elliptical, play tennis, racquetball, and chase wrigley around outside. Now that I've been doing my own plan for several years, it's starting to get old. 

This year, with a new lacrosse/strength and conditioning coach, Hayley, at Sweet Briar, I started tagging along with her workouts. For the entire fall semester, we printed a lifting/exercising chart and did it 3 times a week. I'd supplement it with a day or two of cardio. But all in all, I didn't have to plan or design my work outs. So much better. 

In addition, my best friend has been nagging me to sign up to run a half marathon with her for a while.  Now with a busy spring semester at work, I needed to set up a plan for my workouts. What a better way to have planned workouts then to sign up for a half marathon! 

I signed up the day registration opened (with a gentle push from Hayley who's also running it). I started to panic that my best friend wouldn't get registered in time, so I frantically started texting her while she was busy at work (at her new job that she is rocking!). I ended up just signing her up myself... and nicely asked her to please request the day off! 

Have I ever run more than 5 miles? No. And I've only ran 5 miles once in my life. ha. However, I can run a pretty mean 3 miles! Training for a half marathon gives me a weekly plan; and that's what I need right now to keep me going during this crazy, busy spring season. The race is the day after graduation, so training will take me through the rest of the semester.

biggest decision of my life

I found my wedding dress!!

The "Today" on the champagne bottle is from early February... but I'm still really excited about finding my wedding dress!!

Anyone who knows me, knows that I am the  w o r s t  decision maker of all time. I am much better at the non-decision. Two techniques of making decisions.... emotionally attaching myself to a side or rationally thinking through one. I'm not good at either. My bad decision-making skills goes for anything... where to go to eat, what to wear, picking out a piece of jewelry, where to go to college, buying a car, favorite color, and on and on.

The story from my childhood goes like this. Meme wanted to take me shopping to spend my Christmas money. She wanted me to pick something out that I knew I'd like! Before we left, my dad told her not to make the decision for me. Even at a young age, he knew that decisions are hard for me, so I needed to start practicing!

When you get engaged, everyone wants to know (1) when is the date and (2) what type of wedding have you dreamt about since you were little? For me, I have always envisioned a loving, family centered wedding. I love lots of colors, seasons, flowers, venue sites, themes, music, food arrangements and dress styles. So no, I don't have a dream wedding already planned. I wish!! Each decision is hard.

When you begin shopping for a wedding dress, the question remains... what have you envisioned yourself in since you were a little girl? Cupcake ball gown? Lace or satin? Bling beading and crystals? Flowy beach feel? Strapless or sleeves? Open back? Form-fitting? A-line? Neckline?

Me, envisioning myself trying to decide on a wedding dress has literally kept me up at night. The night before my first dress appointment, I barely slept. I didn't know if I'd like any of the dresses, or if I'd like all of them. Maybe I'd want to try on a thousand dresses. Or, I thought I'd settle on one and then days later change my mind. I was a stress ball. It seems silly now....

The biggest decision of my life...? Done. I chose my wedding dress!! Not to mention, it only took one appointment at one local boutique.

I have a long way to go with the planning, but I have TWO B I G decisions checked off! The date and location are set. Big decision, but necessary to get done early. And second, I have a wedding dress!!

We're getting married and I can NOT wait until July 19th!!!!

holiday travels

Ryan and I travelled over the last several weeks to some pretty special places. The week before Christmas we headed to Decatur, Alabama, home of the best holiday decorations and my favorite grandparents! Both of my parents grew up there, so it's great to be able to see all my grandparents when we visit. While visiting my grandparents, we made two day trips... one to Nashville, TN and one to Auburn, AL.

Nashville, or Nash-vegas, is the center of country music excitement and home of the Nashville Predators hockey team. Dating a Chicago sports fan has automatically made me more interested in Chicago teams winning. When we been dating for only a short time, Ryan's sisters fitted me out in Cubs, Blackhawks and Bears shirts. Furthermore, actually becoming a Chicago Blackhawks fan was easy for me, seeing as last year they won the Stanley Cup. Needless to say, the Blackhawks were in Nashville on Dec. 17, so we made the trip. We LOVED driving and walking around the city on a not-so-busy Tuesday afternoon. Predator fans have some annoying chants, but the Blackhawks shut them up with a W! Go Hawks!

Our second trip was a surprise visit to Auburn University. On Friday, Dec. 20, Ryan got me in the car  with Starbucks and Jimmy Johns) to go on an adventure. He wouldn't answer any of my questions or let me help navigate. There are no signs as you drive to Auburn, so I didn't even know we were going there until we were 5 miles away. Little did I know, Ryan had spent the last 10 days planning out the details of a memorable flight over Auburn University to ask me to marry him! I could not believe it, we were engaged!! Ryan planned everything to a tee. Afterwards, we walked around Auburn, got lemonade at Toomer's Corner, called our relatives & friends and he told me all the planning he had been doing! I loved every minute of it.

I still cannot stop staring at the ring! 

My parents and sister joined us in Decatur, AL for Christmas, which continued the family tradition. Although I don't know how our plans will pan out for the holidays in the years to come, for me, I will always yearn for Christmas to be just as special as it has always been in Alabama.

Our travels didn't stop there.... a few days after Christmas, we met my brother and his family in Arlington, VA. We haven't spent the holiday season with them in a long time (since they've been overseas), so it was great to share time with them.

making divinity candy

I wrote this last year after Christmas, but never got it posted. THANK GOODNESS I wrote it all out, because these details are valuable. Caution..... it's long, with L O T S of details. Bare with me.

Divinity is my favorite candy to eat around the holidays. Everything has to be JUST right for it to turn out. Factors: type of bowl, temperature of the eggs, humidity outside, no rain, stiffness of egg whites, temperature of the caramelized sugar, a long thread, not a lot of people in the kitchen, speed of dropping the pieces, and so on.

Before Christmas, I asked my Grandmama Huff to wait to make divinity so she could teach me how. When I walked in to the kitchen, ready to experience the magic of making divinity, everything was laid out. Dishes, spoons, the pot, stand up mixer, chocolate chips, sugar, cookie sheets with wax paper, room temperature eggs, and Karo. When I asked Grandmama, "Okay, what do you want me to do?" she replied, "I want you to just watch." Thank goodness my only job was to stay out of the way.

Throughout the first batch, Grandmama told me all the tricks along the way and I took notes. L O T S of notes. When we get close to the end, there is a very narrow window of when to drop the pieces. If the dough is still shiny, the pieces will not hold it's form. If you wait to long, the dough becomes too sticky and hard, which makes it impossible to drop into pieces. Our first batch was too shiny, so most of the pieces spread out and didn't hold form. Starting over with a second batch was a must; we were going to get it right.

Here are all my notes of  e x a c t l y  what to do:

Ingredients:
3 cups sugar
1 cup white Karo
1/2 cup plus 1 tablespoon hot water
2 egg whites
pinch of salt
1 teaspoon vanilla

Instructions:
1. To start: Beat room-temp egg whites in stand up mixer (preferably a Sun Beam because it is easier to add the caramelized sugar while it's still turning) until VERY firm. At the same time, heat Karo, sugar and water on the stove, in a cast iron pot, do not stir.

2. Watching the thread: As the sugar begins to caramelize, dip a clean metal spoon and let the sugar drip back into the pot while holding the spoon high above the pot (above the height of your head). As the temperature of the sugar goes up, a thread of sugar will form dangling from the spoon high above the pot. Keep checking the thread. You are looking for a thread to dangle down to the pot, it will break off and "dance" above the pot. This means it's at the exact right temperature. (Keep the stove on at med. heat)
Side note: Most divinity recipes call to use a candy thermometer with the sugar on the stovetop. Adding another tool, which has it's own particular ways, takes away from focusing on the mixing/pouring process.

3. Mixing: With very firm eggs whites in the mixer, turn down to slow speed. Spoon some of the hot sugar into the eggs whites (about 5-7 spoonfuls). Put the sugar back on the stove. Make sure the sugar is mixed into the egg whites. Check for a thread again, then add more. Repeat many, many times until all the sugar is added into the egg whites. Make sure to get a long thread each time.
Caution: The mixing bowl is very hot, only touch the rim, not the base.

4. Continue mixing: Continue mixing at high speed. Watch closely. Add vanilla and salt. Keep dough off the sides of bowl. Notice the dough is shiny, watch for shiny to start turning dull/flat. To test, take a spoon, wrap the dough around it and set it on a plate (see picture). See if the wrap holds it's form... this is how you'll know if it's getting close.

5. Dropping: Remove bowl from mixer. Continue to stir and get dough off the sides. When the dough is not shiny, move QUICKLY. Using two small spoons, drop pieces onto wax paper. Take dough off sides first, as it will begin to harden quickly.

6. Variations:
(a) Adding pecans or chocolate chips. Adding one pecan to the center (or crushed pecans can be added similar to choc. chips). If the dough is not 100% holding form, add chocolate chips and stir 1-2 times through dough. This will make a choc. ribbon, but should not be mixed thoroughly. If the dough is hardening fast, do not add choc. chips, this will make the dough too hard and will be crumbly if dropped.
(b) Dropping techniques. Dropping can be done in one big piece and then after it completely dries, cut it into individual pieces. This is how my Grandmother Joyce used to make it. This would be a great variation if the dough was drying too fast and it needed to be dropped before it was too hard.
Note: Taking requests for variations is dangerous, variations are more successful if the decision is made depending on the dough.

7. Drying: Allow the pieces of candy to dry entirely before putting them in a tin. You will know if they were dropped at the right time if they are not sticky on your fingers.


Divinity making is not easy. Learning to get a thread over the pot of caramelized sugar is a specialized skill.

My grandmother learned how to get a thread from her mother (my great-grandmother). In the family, my grandmother's grandmother is the one who taught her to make all the candy, and how to make divinity. I'm really excited to have learned how to get a thread and make divinity the same way my Great Great Grandmother did! Amazing!

quinoa

Learning to cook with quinoa is so easy and a grain that has 6g of protein per serving (1/4 cup dry) is worth learning to use successfully. (Compared to 5g of protein in rice per serving of 1 cup).

Quinoa mac n cheese.... the first thing I cooked with it. Yes, it was good (isn't all mac n cheese good?). No, it was not that good for you. It still had a lot of cheese and fatty dairy.

Quinoa salads are really the way to go. It does well with some vegetables added and a summery dressing. I tried this one and loved it.  Pinterest has a lot of quinoa recipes. The next one want to make has cherry tomatoes, black beans and a spicy dressing.

Lemon Basil Quinoa salad:
Ingredients:
1 cup quinoa
2 cups water
2 15 oz cans of chickpeas
1 tsp Italian seasoning
1/2 cup chopped fresh basil

Salad Dressing:
1/4 cup of lemon juice
3 tbs Olive Oil
1 tbs white vinegar
1 tbs dijon mustard
1 tsp oregano
1/2 tsp garlic powder
1/2 tsp salt
dash of pepper

Instructions:
Combine quinoa, water, the Italian seasoning and basil in a small pot or saucepan. Boil water, then let it simmer until all water is absorbed by the quinoa (stir occasionally), about 10-12 minutes. Combine dressing ingredients. Add cooked quinoa and chickpeas. Chill in fridge before serving.

bowling in christmas sweaters

I wish I'd taken pictures of us bowling Friday night! We planned a bowling night with some friends and Ryan made it an ugly Christmas sweater extravaganza! Ryan scored 177 in the first game! My high score of the night was 117... which beat Ryan by 1 point that game!
Don't mind Bryan's high score of 170 that beat us both. Look at how many strikes he got!

Saturday and Sunday, Ryan spent most of his time at a workshop at Liberty University learning Graston's technique (http://www.grastontechnique.com/AboutUs/ASynopsis.html). I spent most of my days at home sewing/crafting/football watching and getting ready for the holiday!

Talking about football. Auburn had another big win Saturday in the SEC championship game. Knowing it could rock the boat with the BCS rankings, we watched the first half of the Michigan State/ Ohio State game. And it sure did! Before Ryan left for his workshop early Sunday morning, he left me a note so I wouldn't miss the big news.

birthday celebrations

Yesterday, my co-workers brought me a piece of cheesecake with candles and sang happy birthday. During practice, the swim team sang to me as well!

Upon getting home, Ryan had built me a spice rack with new spice containers, and set up cute new frames. He got me some sweets and I got to make a wish with "26" birthday candles. I think I might just settle in at 26 and not continue to add years.





Birthdays always make me feel special, even if they're low-key. I got a lot of emails, texts and facebook greetings wishing me a happy birthday, which I appreciate so very much!! Thank you all for thinking of me on Dec. 3!
